QUICK AND EASY CHEESE DANISH

This little pastry can fool your palate into thinking you are sitting in a little cafe in Paris? Well, I do have a great imagination but I have tasted pastries in Paris. So consider it an over exaggeration but they really are good.

I use the Pepperidge Farm Puff Pastry sheet and my small pastry roller to extend the edges a bit. Click here to see the roller. I find myself using it quite a bit. I love the smaller end for making graham cracker crusts for cheesecakes. I just roll it all around the pan to even it out.

Each sheet can make 9 nice pastries. Prick the dough and add the egg white wash. Then simply add your cream cheese mixture with a dollop of jam on top. Bake and drizzle.

This is my favorite picture of my parents . I look at it every day because it reminds me that they loved each other this much for seventy two years. When I measure my life in love, it is boundless. There were some struggles such as divorce and starting over. But never did I not feel loved. Momma said if you get down, bake something and give it away. Make these little treats for someone and you are guaranteed a big hug! Momma was usually right.

QUICK AND EASY CHEESE DANISH

Ingredients

BASE

  • 2 sheets Pepperidge Farm Puff Pastry Sheets
  • 1 egg white
  • 1 tsp. water

FILLING

  • 1 8 oz. Philadelphia Cream Cheese, room temp
  • 1/4 cup sugar
  • 1 egg yolk
  • 1 teaspoon vanilla

Garnish

  • 1 teaspoon of your fav jam 

GLAZE

  • 3/4 cup powdered sugar
  • 1-2 tablespoons mi

Instructions

BASE

Preheat oven to 400 degrees.

Lay one sheet of parchment paper on the counter. Lay one sheet of dough on the parchment.

With a rolling pin, roll as close as possible to a 12 x 12. This does not have to be exact. Pick the paper up and set it on the cookie sheet. Use a sharp knife, cut the dough into 9 squares.

Prick with a fork several times. Mix the water and egg white and brush onto each square.

Repeat with the second layer of dough.

FILLING


With a mixer, beat cream cheese until smooth. Add sugar, yolk, and vanilla and beat until thoroughly mixed.

Place a healthy teaspoonful of the cream cheese mixture onto each square. Then add a dollop of jam on top.

Bake for about 15 minutes or until lightly browned.

GLAZE


Whisk the powdered sugar and milk. I highly recommend sifting the powdered sugar to ensure a smooth glaze. Drizzle across your baked danishes.
