WHITE CHOCOLATE POUND CAKE

Pound cakes! Many are the same basic recipe. You just add your favorite flavor. Well, if you are like me, you will agree there is nothing as good as chocolate, especially white chocolate.

I just baked my basic pound cake and added a cup of melted white chocolate, cooled a bit. It looks like an ordinary pound cake until you take a bite of this rich sweetness.

I have so many pound cakes on my blog that are absolutely divine, a flavor for everyone. I think of Momma with her one bundt pan and basic recipe. Oh, how proud she would be to try each one.

I won’t belabor providing the recipe. The key is creaming that softened butter and sugar until it has turned white and fluffy. Using room temperature ingredients helps everything blend much better.

So have at it with a White Bundtmas!

Ingredients

  • 1 cup unsalted butter, room temperature
  • 2 cups sugar
  • 5 eggs, room temperature
  • 3 cups all-purpose flour
  • 1/2 teaspoon soda
  • pinch salt
  • 1 teaspoon baking powder
  • 1 cup buttermilk
  • 2 4-ounce bars white chocolate (I used Baker's) melted

Instructions

Preheat oven to 300 degrees. Grease and flour a Bundt pan. (I use Baker's Joy.)

Melt chocolate in the microwave until smooth and set aside.

In a large bowl, combine flour, baking powder, soda, and salt. Whisk with a fork.

In mixing bowl, cream the butter until smooth. Turn the mixer on low and add the sugar pouring in a stream until all is added. Beat on high about 5-7 minutes , stopping to scrape down sides once or twice, until the mixture appears fluffy.

Turn mixer on low, add a cup of flour and then begin alternating adding milk and the rest of the flour until all is added and thoroughly incorporated.

Stir the chocolate to the cake mixture.

Pour into prepared Bundt pan and bake about 90 minutes. Let cool 10 minutes, then flip onto a plate.

Garnish with powdered sugar.
