SAUSAGE QUICHE

When my kids were in school I loved to make this dish because it was one dish. That meant a lot back then. I did have to use a few pans and bowls to prepare but it takes a bit of work to have something you love.

I have always used Jimmy Dean sausage. Maybe I just liked it better because he was southern. And I always use the Pillsbury pie dough that is in the refrigerated section of the grocer. Yes, it is the long red box, no substitutes for me.

I always have a piece of pie dough left that I can cut out seasonal shapes for the top of the quiche using my cookie cutters.

SAUSAGE QUICHE

sausage and cheese quiche with pastry crust

Cook Time 30 minutes
Total Time 50 minutes

Ingredients

  • 1 Pillsbury Pie Crust
  • 1 pound Jimmy Dean ground sausage
  • 1/2 cup chopped onion
  • 1 tablespoon oil
  • 3/4 cup milk
  • 4 ounces Philadelphia cream cheese
  • 3 large eggs, beaten well
  • 1 cup shredded cheddar
  • 1 splash Worcestershire sauce

Instructions

  1. Preheat oven 400 degrees. Lay out Pillsbury pie dough and use a rolling pin to completely flatten. Place in Pie Plate and flute edges. Put parchment paper in the bottom and lay pie weights on top. Bake 10 minutes. Remove from the oven. Remove parchment paper and weights. Place back in the oven for 5 minutes. Remove and cool.
  2. Lower oven temperature to 375.
  3. In a heavy skillet, crumble and saute the sausage until browned. Remove and drain fat. Use a paper towel to blot any remaining oil off the sausage.
  4. Saute the onions in oil until wilted. Add milk to this mixture and when the milk warms, add cream cheese, stirring until it melts. Set aside.
  5. In a large bowl, add eggs (well beaten), cheddar cheese and Worcestershire sauce.
  6. Add egg mixture to the onion mixture. Stir well and pour into the pie shell.
  7. Pour the sausage over the top of the mixture and slightly press the sausage into the egg mixture.
  8. Bake 30-35 minutes.
