ORANGE LAYER CAKE

There is no doubt that I am a cake lover. There is also no doubt that I am a chocoholic. But occasionally I like something different…like this orange cake.

The directions are simple. All dry ingredients go into one bowl. The wet ingredients go into the mixing bowl. And then the two are combined. The result is a moist three-layer cake that melts in your mouth and pleases your palate.

The frosting is a basic cream cheese and butter frosting but with orange juice. Make sure you use a quality orange juice and shake it up good before measuring what you need for the cake and the frosting. If you want an even better taste, try fresh orange juice.

I used 2 boxes of confectioners sugar because I like a thick layer of frosting between the layers, on top and all around. If you like less frosting, just cut down on your powdered sugar.

Remember, baking is about having fun, not sweating the small stuff and sharing the fruits of your labors.

ORANGE LAYER CAKE

Moist orange-flavored 3 layer cake with orange cream cheese frosting

Total Time 40 minutes

Ingredients

CAKE

  • 2 1/2 cups all purpose flour
  • 1 3/4 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • pinch salt
  • 3 eggs, room temperature
  • 3 /4 cup vegetable oil
  • 1 cup orange juice, room temperature
  • 1 cup sour cream, room temperature

FROSTING

  • 1 cup butter unsalted, room temperature
  • 1  8-ounce package Philadelphia cream cheese, room temperature
  • 1 teaspoon orange zest
  • 7 cups confectioners sugar 
  • 1/4 cup orange juice

Instructions

Preheat oven to 350 degrees. Spray 3 8-inch cake pans with nonstick spray.

In a large bowl, whisk the first five dry ingredients.

In your mixing bowl, add eggs, oil, orange juice, and sour cream and beat on low speed until just combined.

Add flour mixture to the egg mixture and beat until smooth.

Pour evenly into the three cake pans.

Bake 25 minutes.

Remove from oven and cool in pans 5-10 minutes. Turn onto a cooling rack to complete cooling before frosting.

FROSTING

In mixing bowl, beat butter and cream cheese until smooth.

Add zest and orange juice. Beat until combined. Scrape bowl and begin to add confectioners sugar slowly on low speed until all is added.

Notes

This frosting can be left white and garnish with pretty orange slices or you can use a bit of food coloring (yellow or orange) if you like more color.
