MOMMA’S GOLDEN COCONUT LOAF ….

AND MY WALK DOWN MEMORY LANE

I found my sister’s recipe box in one of the many storage boxes in my garage. You see, my parents have both passed away and my older sister, Diane, has passed away. My sister was 59 years old and my parents were 93 years old.

Family deaths are to be expected. Death is inevitable but somehow when it strikes your family, it becomes a surreal experience. When a sibling passes before your parents, that does not seem to be the natural order of things.

There were three of us girls. Diane was the oldest. Momma had two miscarriages and then I was born six years later. Then in two more years, Becky was born.

Diane was starting school when I was born. When I was in the sixth grade, she was a senior so you can plainly see the age difference. But she was the brilliant one. If you asked her something on any subject, she could answer. She has several published books. She knew words I had never heard of. In one of her book dedications, she used the word “peripatetic.” I had to look it up in the dictionary. This is way before Google.

She was the first to die, even before my parents. It was such a loss. I can still see my gentle father leaning over the casket to kiss her goodbye. Her husband lived eight years more. He became reclusive but was generous in that he offered all of Diane’s things to us. Many items were boxed up and put away.

Today I decided to look through a box and there was Diane’s little green file box of recipes. It was as if I had found the pot of gold at the end of the rainbow. Yes, I am sentimental. I went through every card and so many were attached to names of those that are no longer with us. I teared up knowing I had this treasure. At my age, material things matter little like cars and homes. The simpler, the better.

I spotted Momma’s Golden Coconut Loaf Cake recipe in the box and knew this was the day to make it. And so I did to honor my beautiful sister and my beautiful Mother.

Although families do not always agree on everything, they are the only family we have. Love them, tell them you love them. Accept their strengths and weaknesses. Someday, it may be too late.

MOMMA'S GOLDEN COCONUT LOAF

LEMON FLAVORED LOAF CAKE

Prep Time 15 minutes
Cook Time 1 hour 50 seconds
Total Time 1 hour 15 minutes 50 seconds

Ingredients

  • 2 cups all purpose flour
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1/2 cup shortening
  • 1 cup sugar
  • 4 egg yolks
  • 3/4 cup milk
  • 1 tsp. lemon flavoring
  • 3 oz. coconut

Instructions

  1. Preheat oven to 350 degrees.
  2. Spray loaf pan with nonstick spray.
  3. In a small bowl, add flour, baking powder, and salt. Set aside.
  4. Cream shortening and add sugar. Scrape bowl with a spatula.
  5. Add yolks and mix well.
  6. Alternate adding the flour mixture and the milk.
  7. Add lemon flavoring.
  8. Spoon into loaf pan and bake about 50 minutes.

Notes

Can use a drizzle on top of 1 cup powdered sugar and enough milk to drizzle...

  1. Kathy, this is such an endearing story; I can tell you were very close to your loved ones. I have a few handwritten recipes from my grandmother and I cherish them. I miss her dearly! She was famous for a Lemon, Lemon, Lemon Cake which my Dad loved the most. I didn’t appreciate the complex flavors until I was older. I personally loved her braised pork chops, which she taught me to make and I still make for my own family. But I will definitely try this coconut loaf cake when my daughter comes for a visit. It looks so good!
