EASY PARTY MINI-CHEESECAKES

When I saw this mini-cheesecake pan, I knew I had to try it. I love parties and I love to make dainty treats. I got this one from Amazon. It is a Chicago metallic. It is so easy to use and to wash. I am an Amazon Affiliate so if you order from this link, I make a few cents!

The mini cheesecakes can be made in less than 30 minutes. The crust can be made from graham cracker crumbs or cookie crumbs, whatever you have on hand. Press them down into the pan.

Make the filling. This is a basic filling using one block of cream cheese. You can be creative and add key lime juice to taste. You can drizzle with caramel and add some toffee bits. They are perfect for a blueberry on top. It is whatever you fancy.

There are going to be lots of parties coming up for the holidays. Think about making these pretties but you do need the pan. They lift right out!

Mini Cheesecakes with graham cracker crust

Prep Time 15 minutes
Cook Time 25 minutes 20 seconds
Total Time 40 minutes 20 seconds

Ingredients

CRUST

  • 1 cup graham cracker crumbs
  • 1 tsp. sugar
  • 4 tablespoons melted, cooled butter

FILLING

  • 1 8 oz. cream cheese, room temperature
  • 1 egg, room temperature
  • 1/4 cup sugar
  • 1 teaspoon vanilla

Instructions

CRUST

Preheat oven to 350 degrees. Spray mini-cheesecake pan lightly with nonstick spray.


Mix sugar and crumbs.

Add melted butter and stir until thoroughly combined.

FILLING

In a mixer, add cream cheese and beat till smooth.

Add sugar, egg, and vanilla. Beat well and scrape sides with a spatula.

ASSEMBLE


Use a small cookie scoop and fill each hole with the crumb mixture. You can use your fingers to press down or a tart shaper.

You can either pipe the filling in. I just use another small cookie scoop and pour over the pressed crumbs. If I have any left, I just add to each slot to make a little larger.

Bake 20-25 minutes. Remove and cool. You can push from the bottom to lift each cake out, remove the silver bottom and place on a tray and refrigerate.

Notes

I have made these and added key lime to taste. You can do any toppings, sprinkles and have them fit the theme of your party.
