CHERRY ALMOND LOAF BREAD

When I need a quick dessert, I turn to loaf bread. They are quick and easy to bake. Transporting is a snap. Slicing is a piece of cake!

For this cake, you must love cherries. Each bite will provide little bits of nuts, cherries, and that lovely almond flavor. All other ingredients are the usual sugar, butter, eggs and flour combination.

Ingredients

  • 3/4 cup sugar
  • 1 stick butter, 4 ounces, room temperature
  • 2 large eggs, room temperature
  •  2 cups all-purpose flour
  • 1 teaspoon soda
  • Pinch salt
  • 1 10 or 12-ounce bottle maraschino cherries
  • 1 cup milk
  • 1/2 cup chopped nuts
  • 1 teaspoon almond extract

Instructions

  1. Preheat oven to 350 degrees. Spray loaf pan with nonstick spray.
  2. Whisk flour, soda, and salt and set aside.
  3. Drain cherries and reserve juice. Chop the cherries finely reserving a few for a garnish.
  4. Cream the butter and sugar for at least 4-5 minutes, stopping to scrape the sides with a spatula.
  5. Add eggs and continue beating.
  6. Alternate adding the milk and flour. Add almond extract.
  7. Fold in the nuts and cherries.
  8. Pour into the loaf pan tapping lightly on the counter to release any bubbles forming in the batter.
  9. Bake 50 minutes checking with a skewer to ensure the middle is done.
  10. Cool Completely.
  11. Drizzle: Add i/2 cup confectioners sugar and about 2-3 tablespoons cherry juice. Mix and drizzle over cake. Garnish with few cherries.
