As long as I can remember, my parents made homemade ice cream just because. There did not have to be a special occasion. I never remember making it in the colder part of the year. I recall fondly the sweltering days that we sat around taking turns tugging on the handle of the ice cream maker and going round and round. We would also get to consume chunks of ice that Daddy would be splintering with his ice pick. That cold dripping ice felt so good running down our arms on those hot days.
My parent’s favorite ice creams to make were chocolate and vanilla. One of my favorites was strawberry although there were no berries actually in the ice cream. It was made with Nehi or Fanta red drinks. Oh, those were the days! Easy and laid back, just waiting for the ice cream to be ready. Laying on the grass, looking up and not even comprehending that life could get very complicated.
We stood in line holding our cup and spoon and Daddy would dole it out to each one. After everyone was served, he carefully put the lid back on the canister and laid a towel on top to keep it from melting too quickly. And he didn’t want any of that salty melted ice water seeping in our good ice cream! After everyone got seconds, the paddle was pulled out and that was akin to licking the beaters of a mixer!
Recently, I visited my friend, Jackie, who made this homemade ice cream. Boy, did it bring me back to my youth. Although the machine is electric, you still heard that grinding sound of the salty ice as it turned and churned. And when the lid was lifted, my heart skipped a beat. The soft serve was ready. I held my cup and spoon.
Since Bailey’s is an Irish liqueur that includes cream, cocoa, and Irish Whiskey, this would be an adult dessert. And what a good one! Have you ever made homemade ice cream? Give it a try!
JACKIE'S HOMEMADE BAILEY'S IRISH CREAM ICE CREAM
Homemade
Ingredients
- 6 large eggs, beaten
- 2 1/2 cups sugar
- 3 cups Bailey's Irish Cream
- 2 cups Half and Half
- pinch salt
- 2 1/2 tablespoons vanilla
- 2 cups whipping cream
- 1 can condensed milk
Instructions
Use a hand mixer to beat the eggs, sugar, condensed milk and half and half. Cook on low heat and stir constantly for 25-30 minutes. The mixture will thicken. Remove from the stove. Pour in glass bowl and chill in the refrigerator for 30 minutes.
Add Bailey's Irish Cream, whipping cream, salt, and vanilla. Stir well. Pour into a 1-gallon container of your electric ice cream maker. Have your ice and Morton's Ice cream salt ready after you connect your machine according to the manufacturer's directions.
Serve immediately or transfer to airtight containers and freeze.
Notes
This ice cream stays soft. It contains alcohol so consider this your warning for children.
