EASY PEACH UPSIDE DOWN CAKE

It is a peach upside cake and what could be easier. Everything is in one pan. And I use Del Monte’s canned peaches. You can even use the Del. Monte Lite peaches and it would be good.

I love my Nordicware Swirl Upside down tart pan. I can use plums, nectarines, or apples. It will be fun to experiment.

I drain the peaches. You can reserve the syrup and use in a cake mix rather than milk or water if you are looking for a peachy flavor. When I want to impress someone with my culinary skills, this always looks beautiful. Momma would be rolling her eyes about now. She was practical. She would make the same dish in a round cake pan and it might look just as good.

It can be enjoyed warm or cold. It might even make a good breakfast treat. Try it out. I have to admit my pan makes the peach placement easier. It’s like one of those coloring books that you just stay within the lines and you have made it. So grab those peaches out of the pantry and get busy. You will have a few leftover but I am sure you can find something to do with them. (wink wink)

EASY PEACH UPSIDE DOWN CAKE

MOIST YELLOW CAKE TOPPED WITH CANNED PEACHES IN BUTTER AND BROWN SUGAR

Prep Time 15 minutes
Cook Time 45 minutes
Total Time 1 hour

Ingredients

  • 1 1/2 stick (6 oz) butter, room temperature
  • 1/2 cup light brown sugar
  • 1 can Delmonte Sliced peaches in syrup, 29 oz
  • 1 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla
  • 1 1/4 cup self rising flour
  • 1/2 cup milk

Instructions

  1. Strain juice off of peaches and set aside.
  2. Preheat oven to 350 degrees.
  3. In a 9 inch round pan, cut up 1/2 stick of butter and melt in the oven.
  4. As soon as the butter has melted, remove the pan from the oven. Sprinkle the brown sugar over the butter.
  5. Arrange peaches around the pan. See picture. I use the Nordicware Swirl pan.
  6. In a mixer, cream one stick of butter for about 3-4 minutes, stopping to scrape down the sides with a spatula.
  7. Add one egg and vanilla. Mix until blended.
  8. Add about half the flour and begin to mix, slowly pouring in the milk.
  9. Pour in the rest of the flour and beat just until combined.
  10. Spoon over the peaches. The mixture is thick. After you spoon all of it on the peaches, take the back of a spoon, and evenly distribute it.
  11. Bake for about 50 minutes. The top will be brown.
  12. Remove from the oven and let sit for about 10 minutes.
  13. Place plate on top and flip onto the plate.
