Down here in the south, we interchange crawfish with shrimp in this dish. The pictures displayed have crawfish but I have used shrimp many times. I get many of my recipes from my cousin, Gwen. Our families have been eating together and sharing holidays as long as I can remember. And she is not one of those cousins that “forgets” to give you an ingredient. Always the hostess with the mostest, she is an excellent cook.
Daddy used to take home movies at all gatherings. Then when we had company, he would set up the projector and let everyone watch whether they wanted to or not. He loved his camera. My sister had a baton because she was in a group of baton twirlers. Do they even still do that? Well, Daddy was filming all the kids marching, and Gwen and I were vying for the front row. We definitely were competitive as kids since both of us were the bossy of the family. Now we are the best of friends. She is more like a sister to me. Thank you, Gwen, for putting up with my shenanigans as a kid, and thank you more for always being there for me in tough times.
To produce this dish quickly, I purchase the fresh seasonings already chopped in the produce section of my store. Chopping onions messes up my makeup. I cannot have that.

GWEN'S SHRIMP FETTUCCINE
Thick, creamy, cheesy sauce in fettuccine noodles
Ingredients
- 2 medium onions, chopped
- 2 sticks of celery chopped
- 1 bell pepper, chopped
- 3 green onions, chopped
- 1 1/2 stick butter
- pinch salt
- 6-8 oz. Parmesan cheese
- 8 oz. egg noodles
- 2 lbs. shrimp or crawfish, peeled
- 1 tbsp. flour
- 1 1/2 tsp minced garlic
- 1 tsp. parsley
- 2 cups Half and half
- 1/2 lb. velveeta cheese, cut in pieces
Instructions
In a heavy pot, melt butter and slowly saute onions, celery, bell pepper, green onions until the seasonings are wilted and onions clear.
While that is cooking, boil the noodles according to the instructions.
To the seasonings, Add the shrimp or crawfish, parsley, flour, and minced garlic. Stir well and cook for about 15 minutes on medium-high.
Add half and half and the Velveeta. Stir well and cook until the cheese melts.
Pour the drained, cooked noodles into the sauce. Stir well and pour into a 9x 13 pan.
Sprinkle the parmesan cheese on the top.
Bake at 350 degrees for about 20 minutes.
Take out of the oven. It is best to let it sit for about 15-20 minutes before eating.
Notes
I prefer to buy the chopped seasonings from the produce section of my store. No tears for me chopping onions.
